Job Title: Junior Sous Chef

Role Overview
The Junior Sous Chef plays a critical role in supporting the Head Chef and Sous Chef to ensure exceptional food production, guest satisfaction, and adherence to hygiene and safety standards. You will contribute to achieving gross profit targets, develop team members, and maintain a well-organized and efficient kitchen environment.

Key Responsibilities
Operational Excellence
• Assist the Head Chef and Sous Chef in maintaining consistent high-quality food production and presentation.
• Oversee daily kitchen operations, deputizing for the Sous Chef as needed.
• Contribute to menu development, including seasonal updates, detailed recipes, costings, and presentations.
• Monitor food inventory levels and ensure compliance with stock rotation and food safety regulations.
• Work to minimize food waste, control energy consumption, and achieve food cost targets.

Team Leadership and Development
• Train and mentor kitchen staff to uphold high standards of quality and hygiene.
• Allocate daily tasks to team members to optimize efficiency and productivity.
• Participate in the recruitment and selection of new kitchen staff.
• Ensure all team members understand and follow operational guidelines, including preparation for breakfast, functions, room service, and special events.

Hygiene, Safety, and Compliance
• Enforce all health and safety policies, including fire regulations, risk assessments, and hygiene practices.
• Maintain a clean and safe working environment, ensuring equipment and tools are used correctly.
• Conduct regular training on safety protocols and maintain accurate records.
• Support the implementation of the TAM system for health and safety controls.

Collaboration and Communication
• Work closely with the Head Chef to address concerns, clarify responsibilities, and implement improvement plans.
• Attend team meetings and contribute to discussions on enhancing kitchen operations and guest satisfaction.
• Collaborate with other departments to support the overall success of the establishment.

Continuous Improvement
• Regularly review kitchen operations and identify opportunities for improvement.
• Stay informed about culinary trends and integrate innovative ideas into menu planning.
• Assist with stock audits and ensure adequate supplies for daily operations.

What We’re Looking For
• Proven experience in a kitchen leadership role, preferably as a Chef de Partie or Junior Sous Chef.
• Strong knowledge of food safety regulations and kitchen hygiene practices.
• Ability to train and mentor team members, fostering a collaborative and high-performing environment.
• Excellent organizational skills and attention to detail.
• A passion for culinary excellence and innovation.
• Flexibility to work shifts, including weekends and holidays.
